You can use this simple meal tracker for any goals such as wanting to eat more veggie or vegan. It’s up to you if you choose to tick boxes for meat meals or veggie/vegan meals, whichever is easiest for you (you can also change the title to something other than “meaty meals” depending on what you’re wanting to track.
